Groundnut Oil and its Benefits

Edible oil is one of the basic needs without which it is impossible to cook. From our basics like Dal, Curry, Chapatis to the special yummies like Pakoras, Vada etc., Though ghee is the best option, for most of us it is almost next to impossible to use it as a substitute for oil. 
 
Cooking oil is extracted through various nuts and vegetables, “Groundnut” is also one among them. Groundnut Oil contains 40-50% fat and most of it is unsaturated fat, which is better for the heart, most of it helps in reducing the bad cholesterol hence, consumption of groundnut oil does not lead to build-up of cholesterol. This oil is a natural source of antioxidants which helps reduce inflammation apart from other benefits. It is also a good source of vitamin E.

Almost all the edible oils are adulterated with many other cheap priced oils like palmolein oil, cotton seed oil and one of the major adulterants is through paraffin oil. These tampering are majorly to reduce the selling price. Few of these oils do not harm us in any way but, they also do not give us the required nutrients then, there are few of the adulterants like paraffin which acts as a slow poison and is extremely harmful. However, none of these adulterants leave a visual mark of its presence in the oil for us to judge. Only way of testing would be in laboratories using colorimeter. You can refer to a sample test results for sunflower oil.

Oil Adulteration
Refined oil is another technique which is followed to produce an edible oil that is free of odour and flavour, has a light colour, good shelf life, and is also good for frying. Ideally, these processing techniques should preserve the vitamin E variant that is naturally occurring in the oil. But the process followed to refine the oil will not only remove the useful nutrients but also leads to the formation of the trans fatty acid which is a major contributor for heart diseases.
