Wheat is considered as one of the healthier grains!!! And we all love Chapathis, wheat breads etc., for our diets. However, what does the wheat flour actually contain?  Is it good for us? Yes, how good? 
Let us understand in detail - Whole wheat contains all three parts of the grain – “Bran, Germ & Endosperm” (refer to pic 1). However, to make fine textured flour and to improve the shelf life of the product, the bran and germ are removed leaving behind only the Endosperm. By doing this about 25% of a grain’s protein is removed and greatly reduces at least seventeen key nutrients. After the entire process of making the flour, the processors add back some vitamins and minerals to enrich reļ¬ned grains, however, all the lost vitamins or proteins or fiber will not be added, only 30 to 45% is added back to the refined flour(refer to pic 2).

The wheat is directly brought from the farmers, cleaned manually to remove the dirt, straws etc., post which it is washed and put to dry under the sun with a protective cloth spread on it to refrain it from dust. The drying process takes 1 day, later, the wheat as whole is milled. Hence ensuring that all the nutrients are retained in the wheat flour naturally. The flour will be rich in fiber and all the other vitamins and nutrients. This will help keep yourself healthy and away from adulteration.
